Dan's Seafood Gumbo

1 lb. Shrimp
1 lb. Crab meat
1 lb. Crab claws
1 lb. Crawfish tails
1 lb. Scallops
30-oz. Oysters
1 lb. Sausage –Quarter 1/4” thick pieces

2 qt. Chicken Broth
1 cup All-purpose Flour
3/4 cup Vegetable Oil

1 cup Chopped Celery
2 cups Chopped Onions
2 cups Chopped Bell Peppers
1 lb. Cut Okra
2 tsp. Salt
1/2 tsp. White Pepper
1/2 tsp. Cayenne Pepper
1/2 tsp. Black Pepper
1/2 tsp. Thyme
1/2 tsp. Garlic
1/2 tsp. Oregano
2 Whole Bay Leaves

• Combine salt, peppers, thyme, garlic, oregano, bay leaves and set aside. More to taste.
• Make rue with oil and flour (heat oil at high temperature in skillet and add the flour. Cook until dark brown). Add chicken broth to rue then bring to a boil.
• Add onions, bell peppers, celery and okra and bring to a boil.
• Add seasoning and sausage and bring to a boil, then simmer for 15 minutes.
• Add crab meat and bring to a boil.
• Add shrimp, crawfish tails, oysters and bring to a boil, then simmer for 15 minutes. Turn off and let stand for 15 minutes.
